  • Creaming the butter and sugar

If you want a light and fluffy cake, then you need to get your creaming right. It must not be overlooked because it is very important. When mixing the butter and sugar, air is allowed in the batter to aerate it and when baked it gives a fluffy cake. This process might take up to 10-15minutes and at the end of the creaming, the mixture will become fluffy, light and pale in colour.

  • Roles of eggs in cake baking

After the creaming, the next thing is to add the eggs. The eggs should be added one at a time to emulsify the batter. It should be added when the mixer is running on a low speed and also ensure the eggs are at room temperature and not cold.

  • Incorporating the flour and milk

When adding your flour and milk to the batter, you need to alternate it i.e. alternating wet ingredients with dry. This will prevent the mixture from being overmixed.

To achieve this, ensure your flour, salt, and baking powder are sifted together. If you are using a mixer( which is the best to use when baking)put on low speed and add the flour in streams then followed by the milk. The flour should be the last thing you add to the batter.

How to bake a simple cake for beginners

The recipe below is very simple and easy to learn to make and can be used for any occasion.

Ingredients

11/2cups of sugar

1/2 cups of butter

21/4 cups of sugar

3 large eggs

1 tsp of salt

3 tsp.of baking powder

11/4 cup of whole milk

1 tsp of vanilla

Tools

  • Measuring cups and spoons
  • A stand mixer or hand mixer
  • Two’ 9′ inches baking pan

Directions

  • Preheat the oven at 350F
  • Sift the flour, baking powder, salt and set aside.
  • Prepare the baking pans by rubbing the bottom and sides of the pan with very little butter. Make sure the butter gets to all the corners and sides of the pan. Flour the pan by pouring small into the pan and remove excess flour left in the cake pan.
  • Cream the butter and sugar for about 4-5 minutes till it becomes light and fluffy.
  • At this junction, it is time to add in the eggs. You are to add the eggs one at a time because it enhances your chance of getting a smooth batter.
  • Add half of the sifted flour mixture into your batter mix till it is smooth then alternate by adding the milk. This will ensure that the milk is well absorbed without overmixing it.
  • Beat in the remaining half flour, mix properly till it is well combined and no flour is visible in the mixture.
  • Your cake batter is ready, all you need to do is divide the batter equally into the baking pans.
  • Smooth the tops of the batter in the cake pans with a spatula.
  • Place the pan s in the preheated oven and bake for about 25-35minutes.
  • When the cake is done, it will rise and golden in colour.
  • To do the proper test, just dip a toothpick into the centre of the cake and if it comes out then your cake is ready.
  • Allow to cool down before decorating or cutting to eat.
