HOW TO MAKE BLACK SOUP

Today’s article is on how to make black soup, I hope you enjoy as I take you into the world of making this delicious soup. This is a delicious soup that hails from Edo state. It is also known as omoebe in Edo language and the name black soup was coined due to the color of the soup.

Black soup is very delicious and nutritious and this is all due to the ingredients used in making this soup( especially the vegetables). The vegetables used are not just for making the soup but they also good for making herbs, so this should tell you that Omoebe is one soup you should have on the list of soups you cook in your kitchen.

The major ingredients of this soup are Bitterleaf, Uziza, scent leaf and any meat of your choice(The other ingredients will be discussed below). Some people do not use the three leaves mentioned above; sometimes they use any two out of it.

Facts About Black Soup

They choose either bitter leaf and uziza or bitter leaf and scent leaf, some even leave out the bitter leaf just go for scent leaf and uziza. If you visit the Edo people, you might even see them using other vegetables that are only peculiar to their town. For example, Ebe sira which can only be found in their town, but it is combined with some of the vegetables mentioned above to make this great soup.

Anyhow you choose to combine your vegetables, I can assure you that you will still get a nutritious soup. One thing that makes black soup different from other soups is the leaves are not shredded but blended. This doesn’t mean that the soup is difficult to prepare, I can tell you that immediately you blend the leaves, the rest of the process is just a one-way direction.

Consuming this type helps us to incorporate vegetables into our diet. As we all know, vegetables help to keep us in good health and shape, keep diseases far away from us, It is also very good for detoxifying the body e.t.c.

INGREDIENTS

A bunch of bitter leaves( 250 g)

A bunch of uziza leaves (250 g)

1/2 cup of scent leaves( Efirin)

4 pieces of stockfish

1 piece of dry fish

1/2 kg of beef

1/2 kg of ponmo

1/2 kg of assorted meat(offals)

1 tbsp. of grounded crayfish

3 tbsp. of palm oil

8 pieces of scotch bonnet

2 medium-sized onions

2 seasoning cubes

salt to taste

DIRECTIONS

Pick the leaves of the vegetables, rinse and blend with the scotch bonnet and one onion using a blender till it forms a paste( The blended leaves gives the soup the black color). Make sure you add water to the leaves before blending.

Wash the beef, ponmo, assorted meat, stockfish and place in a pot, add in onions(chopped), seasoning cube and salt. Cook the meat for about 50 minutes till the meat becomes soft.

Rinse the dry fish with hot water add it to the boiled meat in the pot, pour in the palm oil and allow it to cook for 15 minutes till it combines well.

Pour the blended vegetables with a seasoning cube and salt( you might not need it if the salt in the meat stock is enough).

Allow the soup for 5minutes.

Your delicious and nutritious Black soup is ready.

You can serve with any semo, pounded yam, eba or any swallow of your choice.
